5 Ways to Cook the Right-Size Turkey

On Thanksgiving Day, one size turkey needn't fit all tables.

Before you splurge on a full-size bird, consider the size of your group, and tailor your turkey purchase appropriately.

The biggest Tom in the barnyard may not be the best fit for your feast.

RODALE NEWS, EMMAUS, PA—If you're the designated bird-server this week, you probably have turkey on your mind. But before you buy, pause and take a moment to assess your true turkey needs. At your gathering, are there a lot of turkey fans? Do most people only eat the breast meat, eschewing the dark meat? Are there just a few of you at the table this year? Maybe even just two? Considering these factors can help you make a turkey choice that best fits your situation. For example, instead of hoisting an entire bird into your oven, you can roast just a turkey breast, or even brown up some turkey cutlets for a satisfying, seasonal meal that serves fewer people. And we've got some easy turkey recipes to tell you how to do it.

Even if you opt for a smaller turkey entrée, you’ll still be reaping turkey's health benefits. Packed with protein, the meat is an excellent source of niacin, phosphorus, and vitamin B6, and a good source of iron and riboflavin. And while it contains half the saturated fat of beef, turkey breast is just as rich in selenium, a cancer-fighting mineral and antioxidant. Turkey boasts the fewest calories per ounce of any animal protein, and contains leucine, an amino acid that might play a role in preserving muscle mass during weight loss by keeping metabolism functioning properly. Protein is also more filling than fat or carbs, so you’re less likely to overdo it on delicious Thanksgiving side dishes (we'll have suggestions for those tomorrow, by the way). And be sure to look for organic or free-range turkey when you shop.
