I had no idea that something
I had no idea that something as simple as boiling water could be so effective at killing weeds completely. We have some pernicious weeds growing up between the cracks outside our conservatory door, and they will be getting the hot water treatment right away!
killing thistles
My Dad born in 1914, told me that to kill thistles, cut them off and pour salt into the hollow core. works for me and I've killed broom bush the same way, used road salt for that.
weeds
Marie is right, you need a goat and a donkey for the thistles. They dig them out to get to the roots. Might have a few holes to fill up, but thistles are gone for good. You might get rid of your weeds, but keep in mind, the neighbors weed seeds will still be coming back on your place, unless you can get them to do something about it too. Good luck!
Weeds
Sounds like you need to borrow someone's goat!
"a larger teakettle"
There are commercial-scale steam weed-control devices such as http://www.rittenhouse.ca/asp/Product.asp?PG=1898, but I'm not familiar with a consumer unit. Maybe you can talk your local rental business in to buying a commercial one so you can rent it.
Another option you may want to check out a flame weeder, such as http://www.johnnyseeds.com/p-6000-red-dragon-backpack-flame-weeder.aspx
Weeds
I have 2 acres of weeds, most;y thistle and milkweed. Where can I buy a larger teakettle?
